*In a bowl, combine fresh local ricotta, freshly grated imported Parmesan and basil and season to taste with salt and pepper. Spread the mixture into a pre made tart shell. Top with heirloom tomato slices from the farmers market (Mondays in Beverly) and sprinkle with salt, freshly ground pepper and basil leaves. Serve immediately. Serve 8.
